Zucchini Pancakes
makes 12 pancakes
3 cups of coarsely grated zucchini
1/2 cup flour, sifted
1 teaspoon baking powder
salt and pepper
1 egg, beaten
oil for frying
to serve:
melted butter
grated Parmesan cheese
Mix the zucchini with the flour, baking powder,
salt and pepper in a bowl. Add the egg and mix
well. Heat oil in a large, heavy bottomed frying
pan, then drop in tablespoons of the mixture and
cook, turning once so the pancakes are golden on
both sides. Serve with the melted butter and
grated Parmesan.
