Zucchini Pickles
4 qts. zucchini, peeled, seeded and cut in chunks
6 med. onions, sliced
1 red pepper, chopped
1 green pepper, chopped
Mix and sprinkle with a handful of salt and ice cubes.
Let stand 2 hours and drain well.
SYRUP:
Mix: 3 c. vinegar 1 c. water 2 cloves garlic, chopped
2 tbsp. mustard seed 1 1/2 tsp. turmeric 1 1/2 tsp.
celery seed Pour over zucchini, onions and peppers.
Heat to boiling and boil about 10 minutes. Put in jars
and seal.
