Carolyn's Earthquake Recipes
This is for MarilynJ who wanted a TNT Blackberry Jam Cake with Caramel Icing and
was requested Wednesday, 8/13.
This is my Mother's Blackberry Jam Cake for which she is famous for making. This
is very moist and delicious. She is now 88 years old and still going strong! If
Windstone Farm Blackberry Jam is sold in your area, this is also the recipe they
use on their label.
Aunt Gin's Blackberry Jam Cake
3 eggs
2 cups self-rising flour
2 cups sugar
1 cup buttermilk
1/2 cup oil
1 cup chopped pecans
1 1/2 cups Blackberry Jam
1/2 tsp. nutmeg
3 tsps. cinnamon
3 tlbs. cocoa
3 tbsp. condensed milk (not evaporated)
Preheat oven at 350 degrees. Grease tube pan and line bottom with wax paper.
Cream oil and sugar. Add eggs one at a time and beat well. Add buttermilk and
mix well. Mix flour, spices, cocoa and nuts in a separate container. Add to egg
mixture and mix well. Add jam and mix thoroughly. Stir in condensed milk.
Pour into greased tube pan and bake for 1 hour or until toothpick comes out
clean. Top with Caramel Icing. Recipe follows.
Caramel Icing
1 1/2 cups brown sugar
3/4 stick butter
1/3 cup milk
1 1/2 cup confectioner's sugar
Pour confectioner's sugar into metal or heat proof mixing bowl and set aside.
Mix brown sugar, butter and milk in saucepan. Bring to a boil and boil for 1 1/2
minutes. While still hot, pour this over
the confectioner's sugar and beat with mixer until smooth and thick enough to
spread over cake. You can decorate the top with whole
pecans if you wish. You can also make a brown sugar glaze to drizzle over the
top instead of icing the whole cake.
My favorite way of eating this cake is without icing, cut a slice, warm it in
the microwave, spread with a little butter and have it with my coffee.
You can also make in small loaf pans but you will have to adjust the cooking
time.
I use seedless blackberry jam as I don't like the seeds. Enjoy!

Just wanted to share this recipe with you all for a different type of bread to
serve with any meal.
Cut hotdog buns in strips or sections. Roll these in melted butter mixed with
lemon pepper. Cook these for f2 hrs at 200 degrees. They are so crunchy &

I've never made vanilla extract, but I would suggest a health food
retailer. Here in Scotland we have recently got a weo know spice co
selling the beans in small jars. I was going to try them, but I have
two vanilla beans in with my cooking sugar and they have been in there
for a long time - I just keep on adding sugar. Financially I would
definitely go for the heath food shop.

This is for any of you that have cracked hands and finger tips. Go to
Walgreens and get MIRACLE FOOT REPAIR. It is in a white tube with brown
printing. I bought some for my mother while she was still living, and it
worked wonders on her hands. It is about $10 for a large tube. (Also works
for cracked feet, and is safe for diabetics.
I am going to give you a recipe from another favorite cookbook of mine -
MAKE YOUR OWN GROCERIES.
Many of you would enjoy this book. The book contains mixes of all kinds
that have wholesome ingredients with no chemical additives or preservatives.
Frozen French Toast(I buy flax seed bread at the health
food store for a very nutritious and good French toast
5 eggs
1-1/4 cups milk
2 T sugar
2 tsp. vanilla
1-1/2 tsp cinnamon
1/4 tsp nutmeg
8 slices bread
Combine all ingredients except bread. Lay bread close together in a jelly
roll pan. Pour on egg mixture and
let sand until absorbed. Brown bread in a little butter. ( I used my
electric skillet so I could cook several slices at a time. French toast
should be fully cooked.
When you want French Toast, put in the toaster or warm in the microwave.
We eat this with homemade maple syrup from the same book.
Maple Flavored Syrup
1 cup light corn syrup
1/2 cup water
1/2 cup brown sugar
1/2 tsp maple flavoring
combine all except flavoring in a pan, and boil until dissolved. Let cook
and add flavoring. MMMMM good!
If you have a tough to remove spot on clothes try this. Put pure lemon
juice (bottled or fresh) on the stain and lay the piece out flat in the
bright sun.

Alice (8/16/08)- I like adding nice seasonal sprinkles to the
top of marshmallow treats for bake sales. I makes it a bit fancier and they sell
better. Also mini brownies made in mini muffin cups are great for bake sales.
They are so good. Use a fudge recipe to make them super good and you can add a
Hershey's Kiss to them when they come out of the oven. YUMMO! I make them in
mini muffin wrappers too.

In a parfait glass, place a layer of grapes, a layer of sour cream and a thin
layer of brown sugar. Repeat this process until the glass is filled, about three
or four layers. This is a fantastic, simple dessert.

I just wanted to share something about a new product that I bought. It is
called a Cordless Swivel Sweeper. It is battery operated
with a recharger. It is a small sweeper but really does the job for small
messes. Our cleaning lady at work uses one and she showed me how it
worked. It is also very light so is easy on the back which I need. It is
sold at K-Mart, Walgreens and CVS that I know of. It is actually on sale
this week at CVS. It runs anywhere from $29.99 on sale to $39.99 and I

Just a few notes... another sweetener which will not raise blood sugar and is
excellent in plain yogurt, tea or anything else is Agave Nectar.
This is all- natural from the Salmiana Agave plant whose name means illustrious.
Native descendants of the Aztec tribe harvest the juice by hand daily. It does
not raise blood sugar levels and can be used in place of sugar, honey or maple
syrup. I get it at the Health Foods store and having been using it for a couple
years. For the woman who mentioned liking coconut, I use only Organic
Unsweetened Shredded Coconut with no sulfites, preservatives, sugar or trans

To Sue in NC: re Granny Laws Chocolate Pie
1 can evaporated milk and 1 quart of regular milk are not the same amount of
liquid. If you use evaporated milk, do you add enough water to make 1 quart?

In the 8/16 newsletter Dee was wanting a Tuna Toasties recipe and I have used
this for a while for us and we like it. I got the recipe from

Tuna French Toasties
1 can tuna, flaked
1/2 cup celery, chopped
1/4 cup mayonnaise
1 tablespoon lemon juice
1/8 teaspoon salt
dash of pepper
2 eggs, slightly beaten
1/2 teaspoon salt
1/2 teaspoon milk
8 slices white bread
Combine tuna, celery, mayonnaise, lemon juice, salt and pepper. Spread mixture
on 4 slices of bread. Cut sandwich in half diagonally. In a shallow dish,
combine eggs, salt and milk and stir until well blended. Have a griddle or
frying pan greased and heating on the stove. Dip sandwich half one at a time in
egg mixture, turning to coat both sides. Allow egg to drip off slightly. Place
on hot griddle. Repeat until griddle is full. Gently fry until brown, turning
sandwich once.

Any kind of cookies, brownies, rice krispies treats and anything that they like
to eat after school.
In the 8/16 newsletter Marti in AL was wanting a tomato basil soup recipe. I
have used this a few times and it is good but I am not to eat tomatoes because
of the acid in it that cause me stomach problems. I still have it and raw
tomatoes because I like tomatoes yes I have to pay for it in a big way. This
problem I have had for a while and it is not from the soup.
Tomato Basil Soup
1 large mild onion, chopped I use 1 medium onion and 2 shallots we prefer it
this way
1/4 cup butter
1-1/2 lbs. ripe tomatoes, or 28 oz. can diced tomatoes
2-1/2 cups chicken broth from the carton
3 tablespoons fresh basil, chopped take basil of the stem by stripping the basil
from the stem
Saut?the onion and shallots in butter until soft. Add tomatoes and continue
cooking for another minute. Pour in the chicken broth. Bring to a boil then
simmer for 20 minutes. Puree the mixture in a blender, then add basil. Return to
the heat until warmed.

I am looking for a good TNT recipe for a potato dish, cooked in
the crock pot, preferably using the frozen hash browns, with similar
ingredients, as the dish done in the oven? I have made the baked potato dish a
lot over the years, but I only have one oven, and I will have a roaster pan full
of barbecued ribs in there, so wanted to use my crock pot to cook the potatoes.
I looked in several of my cookbooks today, and didn't find a single one done
that way, but I am sure there has to be some good recipes out there, that would
please our company next week. Thank you in advance. Also thank YOU Nancy for the

Tomato And Basil Soup
1 medium onion
1 tablespoon olive oil
2 large cans whole tomatoes or a dozen or so fresh Roma and hothouse
4 cups chicken broth
6 sprigs basil tied with string
1 teaspoon minced shallot
2 teaspoons balsamic vinegar
1 cup heavy cream
Salt and freshly ground black pepper
Basil leaves sliced in thin strips
Saut?sliced onion in olive oil in a heavy bottomed pan and cook over medium
heat until soft, about 7 minutes. Tie basil together with twine (or just slice
into strips).
Add tomatoes chopped in large pieces, basil, chicken broth, salt and pepper.
Bring to a boil, lower heat and reduce soup by 1/4. Remove basil bunch (if used)
and puree soup mixture. Heat soup, add balsamic vinegar and stir in heavy cream.
Serve with a basil garnish.

Pickled Eggplant
3 pounds eggplant
2 tablespoons salt
1/3 cup virgin olive oil
1 small onion
1 small red bell pepper, seeded and julienne
6 garlic cloves
1 tablespoon oregano leaves
1 tablespoon capers
1/2 teaspoon dried hot red pepper flakes
3 cups white wine vinegar
2 tablespoons sugar
Peel the eggplant and cut into 1/8 inch julienne strips about 2 inches long.
Place the eggplant in a colander. Add the salt and toss well.
Cover the colander, place over a large bowl, and let stand 1 hour.
Combine the oil, onion, pepper and garlic in a large, heavy non-reactive
Dutch oven or deep skillet
Place over medium heat, and saut?the mixture for 5 min. Add the eggplant
and saut?until golden on all sides, about 5 min. Stir in the oregano,
capers and hot pepper flakes.
Remove the pan from the heat and divide the eggplant mixture among 6
sterilized half-pint jars.
Return the Dutch oven to the stove and add the vinegar add sugar. Turn the
heat up to high and bring the mixture to a boil.
Reduce the heat and simmer for 5 min.
Remove the pan from the heat and spoon the liquid mixture equally into the 6
jars, leaving a 1/4 inch head space in each jar.
Seal the jars and process in a boiling water bath for 15 min. Let cool and store
in a cool, dark place for 2 - 3 weeks before using

Tuna Toasties

1 220 gm can tuna (1 regular small can)
1/2 cup mayonnaise
1 small onion diced fine
Little green onion
1 teaspoon curry powder (mom did not use this)
1 loaf sliced white bread
1/2 cup melted butter
Combine the first 4 ingredients, mix well.
Brush both sides of slices of the bread with melted butter. 3. Spread tuna
filling, roll up diagonally, secure with a toothpick, sprinkle with paprika.
Bake at 200 degrees c for 10-15 minutes.
Or you can dip in a beaten egg and fry in the fry pan
OR you can just butter both sides of filled bread and fry up just like a
grilled cheese sandwich. So many ways to prepare this lovely childhood
favorite sandwich

Coconut Milk
Soak 1 cup desiccated coconut in 1 cup warm water for 15 minutes. drain and
squeeze all liquid from coconut. Ise light liquid, discard coconut.

Nancy in Houston asked about making her own vanilla. I have been making it for
years. My recipe has no sweetener in it. I order my beans from Atlantic Spice

I just checked and a 4 oz. package is now priced at $17.40 (about a year ago
they were over $40).
The only problem is you must have a $30 order but you may find other items you
would like at their site. I usually combine orders with daughter and/or friends
to make the $30 requirement. The beans in supermarkets are usually only about 4
beans to a package and much more expensive. The Atlantic Spice 4-oz. package
contains about 25 beans.
Vanilla Recipe
Cut the beans open; insert in a one liter bottle of vodka, cap tightly.
Store in dark place for at least three months. Shake bottle occasionally.
Note: You can use brandy, bourbon or whiskey but I prefer vodka.
When I need to make more, I often just leave the used beans in the bottle,
add fresh beans and vodka.
A 4 oz. package has about 25 beans which is enough for a liter of liquor.
You can also remove the used beans from the bottle, dry well, put in container
and add sugar to cover. Use this vanilla sugar for baking, etc. Be sure beans
are very dry before adding sugar.
And a comment on the Pasta 'N More which I recently purchased from, I think,
QVC. I tried it today for the first time. . .WOW, what a great way to cook
pasta. I followed the directions for 2 servings and amount of water necessary,
put in micro for 15 minutes and it was perfect! Now I will try this for fresh
veggies, etc.
Whoever thought you could cook pasta in the microwave. And I'm sure just
using an ordinary microwave safe dish works also but have to guess at amount of
water. With the Pasta 'N more measurement for water is marked on the side of the
container.

Barb in Central NY August 16th newsletter wanted to know how to get rust
looking stains out of clothing. If it's from iron in the water, your
clothes will look like they have rust stains. For years I've used Iron Out when
I lived in areas that had heavy amounts of iron in the water. It really, really
works. My white poly nurses uniform was dark beige after only a few washings in
that awful water, but after one washing with Iron Out it was sparkling white,
just like new. That's when I insisted we buy a water softener, problem solved.

Seems like they would get to be soggy little pillows of stuff, not the crisp

This recipe is for Lois in VA who wanted a recipe for foolproof Prime Rib. It
was included in the "Colorado Cache" cookbook.
1 Standing rib roast, any size
Start at 3:00 p.m. Preheat oven to 375 degrees. Place the roast in the oven and
cook for 1 hour. Turn the oven off. Keep oven door closed! 45 minutes before
serving turn the oven to 300 degrees. Always comes out medium rare. Enjoy!!
