These are quick and easy chilli recipies for Elyse. Hope she enjoys them as much as my family does.

Black Bean and Corn Chilli
1 lb hamburger
1 15oz can corn, drained
2 15oz cans black beans, rinsed
1 15oz can beef broth
1 teaspoon cumin
1 tablespoon chilli powder

In a large skillet, brown beef and drain off fat. Add all remaining ingredients. Bring to a boil, reduce heat, cover and simmer for at least 15 minutes.


White Chili
3 large chicken breasts, cut in cubes
1 large onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
3 15oz cans Great Northern Beans, 2 drained and rinsed, 1 as is
1 15oz can chicken broth
2 4.5oz cans chopped green chiles
1/4 teaspoon cumin

Cook chicken, onions, pepper and garlic in skillet until chicken is
no longer pink. Add remaining ingredients and bring to a boil.
Reduce heat, cover and simmer for at least 15 minutes.

Italian Chili
3 15oz cans Great Northern Beans, undrained
1 14.5oz can diced tomatoes
2 cups frozen bell pepper stir-fry
1 tablespoon dried Italian seasoning blend
1/2 lb. kielbasa, cut into bite-size pieces.

Combine all ingredients except sausage and boil. Stir in sausage and return to a boil. Reduce heat, cover and simmer for at least 15 minutes.

I don't understand the internet much and I can't understand how you can afford to have recipes that are free.  I see ads but how do they work?
I am new to the internet and don't understand a lot about it.

Yes, the site is free.  I have one popunder that comes up the first time you enter my site.  It doesn't show up again for another 24 hours.  I get paid a small amount per thousand for new individuals that enter the site.

I also have text ads on the site.  If a member sees one of those that they want to visit that also earns a little.  As long as people continue to come to the site and as long as they see a few text ads they like and want to check out the site will stay online.  Currently about 1 out of every 30 people signed up for the newsletter visit the online version.

Hi Nancy,
We have a smooth top stove (GE) and have had it for over a year. It is great! We have had no problems with it nor has it cracked. I use both a
new set that is flat bottomed and also a set that is old and kind of warped. Both work just fine and cause no problems! Love it!

Also, with the Home Cookin' Program, I agree with you. It is much faster and better than any other program out there. It takes up so little "space" on the hard drive, too. I love mine!

Banana Nut Bread
1/2 c. oil
1 c. sugar
2 eggs, beaten
3 very ripe bananas, mashed
2 cups flour
1 t. baking soda
1/2 t. baking powders
1/2 t. salt
3 T. milk
1/2 t. vanilla
1/2 c. pecans

Cream the oil, sugar, and eggs together. Add the mashed bananas. Sift the dry ingredients together and add slowly to the creamed mixture. Add milk and vanilla. Fold in chopped pecans. Bake in a greased loaf or bunt pan at 350 degrees 1-1/2 hours.

Apricot Nectar Cake
I box yellow or lemon cake mix
3/4 c. oil
4 eggs
1 sm. box lemon Jell-O
3/4 c. apricot nectar juice

Mix all of the above. Bake in bunt pan. Pour glaze over cake while hot.

Glaze;
1 c. sugar
2 T. lemon juice
2 T. apricot nectar juice

Bring to a boil. Pour over cake while hot.

I have been a member of this newsletter since 1996.  There was a member that posted a lot of really good recipes several years ago.  Is Lisa East Texas still a member.  She always had the best recipes.  Could she post a few of her favorite recipes for us on this newsletter.  I would appreciate it very much.

It has just occurred to me that I have not yet found a Copycat recipe for Crescent Rolls similar to the Pillsbury ones. There are a lot of recipes using them but they are expensive and I don't buy them often. If anyone knows of a recipe, I would be ever so thankful . Nancy, this deed of love you spend so much time on is more appreciated than we can express. Just know that we are continually grateful to you for presenting a site that gives us so much .

I dearly love it and used to buy it when I was in Oklahoma City but the store doesn't make it anymore. I'm in Nebraska now but would love some.

Just a thank you for all your efforts in putting out this newsletter. It is the highlight of my day! Going from a city of 100,00 to a town of 600 really has it's drawbacks. So you put the smile back on my face. I need some help on some recommendations for my Corian countertops. I absolutely hate them! Does anyone have any advice for me. I would so much appreciate it.

Barbecued Baby Back Ribs
2 pounds ribs
1/4 cup peach preserves
1/2 cup water
juice of 1 lemon
1-1/2 Tbsp. brown sugar
1 Tbsp. vinegar
1/2 tsp. paprika
freshly ground black pepper
2 Tbsp. Worcestershire sauce

Preheat oven to 450?. Place the ribs on a rack in a shallow baking pan and roast in oven for 30 minutes. In a small saucepan, combine all other ingredients and cook over medium heat until thickened, stirring constantly. Remove the ribs and rack from pan and pour off the fat. Reduce oven heat to 350?. Return ribs to the pan, and pour the sauce over them. Bake uncovered, basting occasionally, until rubs are tender, about 1 hour. Serves 4.

About 2 weeks ago, Maria requested a Lemon Pudding cake Recipe. This was a favorite of my young family in the 60's and 70's, purchased as a mix at the store, and is no longer manufactured.

The recipes provided by readers all called for the hassle of stiffly beaten egg whites, etc.

In today's newsletter (9/11), you provided a link to Nancy's Kitchen, Puddings, for a bread pudding. So I connected, and as I scrolled down, saw "Lemon Pudding". The description of what Maria and I remember is perfectly described! Without the hassle.

In response to the person who uses only Diet Mountain Dew in her punch, I would caution you not to use diet pop that is sweetened with aspartaine or Nutra-Sweet(diet Mountain Dew is sweetened with this). Many people, including myself are highly sensitive to aspartaine. It causes severe memory loss (I am not even able to count to 10 if asked to do so) and gives me migraine headaches. Doctors tell their pregnant and nursing moms not to use it! It can also cause seizures in some children. My daughter's neurologist told us not to give it to her. Search the web and you'll find more health problems associated with this product.

Corn Dog Casserole;
1 (28 ounce) can baked bean, undrained
1(16 ounce) package cocktail - size hot dogs { or 1 pound standard hot dogs cut into 1 & 1/2 inch pieces
1/2 cup barbecue sauce
1/4 cup finely chopped onion

Topping;
1( 6.5 ounce) package corn bread or corn muffin mix (or make a half a batch of a corn bread recipe)
1/3 cup milk
2 T's butter or margarine - melted
1 egg

Heat oven to 375?. In a large saucepan, combine all casserole ingredients; mix well. Cook over medium -high heat until bubbly, stirring frequently. Pour into ungreased 2- quart casserole dish.
Prepare corn muffin mix as directed on package, using milk, butter, and egg. Spoon batter evenly over the top of hot bean mixture.
Bake at 375? for 20 to 25 minutes or until corn bread topping is golden brown. Serves 6

CHINESE CHEWS
3 eggs
3/4 cup sugar
3/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup chopped pecans
1 (8 oz) pkg. chopped dates
10X sugar

Beat eggs well. Gradually add sugar and beat well. Mix flour, baking powder and salt together and gradually add to the eggs and sugar. Fold in dates and nuts.
Pour into VERY WELL greased 9x13-inch baking dish.

Bake for 33-35 minutes at 300 dgrs. They should be light brown on top. Cool
completely and sprinkle all over (especially bottoms) with 10X sugar. Cut into bars.

NOTE: I take a small portion at a time from the baking dish and coat them very well.

I am looking for a recipe that was in the 4-H books back in the early 50's into the late 50's. It's called Red Devils Food Cake. It was a moist cake that had cream of tartar and if I remember right sour cream and coffee.

Technically yes, there is a slight difference in the fat amount in the two, but for recipes they can be used for each other. Many recipes will call for heavy whipping cream, or heavy cream(whipping cream) etc. It depends on your markets and what they carry. I have never seen the two sold side by side, only "Heavy Cream" and "Light Cream" in my area. Tami


The other day I went to Staples Office Supply and purchased a large 3-ring notebook binder and a package of clear tab index sheets with paper inserts for labeling that come in the package. The clear tab index sheets are more sturdy and easy to see through. I wrote all the categories I need to use on the paper inserts and then inserted them into the plastic tabs. When Nancy's newsletter comes out I go to the recipe, just highlight to select the recipes I want and print them. To file my recipes in the notebook binder, I use a 3-hole punch and then file them under the category I have chosen. When I need a recipe all I have to do is open my notebook binder that I have organized myself. I have even made a label for Household Hints.

Here is my delicious chili recipe. It's simple and always great!!! You can adjust the tanginess by altering the amount of CHILI SEASONING you use.

Chili
1# ground chuck (browned & drained)
1 large onion, coarsely chopped
3-4 garlic pieces (chopped)
1 LARGE can CAMPBELL'S TOMATO JUICE
1 med. - large can BROOKS CHILI BEANS in chili sauce
1 can tomatoes (fresh if you have)
1/3 or so green pepper (chopped)
salt & pepper to taste
1-2T chili seasoning ( more if you want)

I can judge the amount of chili seasoning by the color of the chili in the pot. Taste it too!

Mix all the ingredients together in a pot, kettle, Nesco roaster, or crock pot.

Simmer 1hr. or so covered. I take off the cover near the end of the cooking time, since my family likes a thicker chili but do it longer in a crock pot.

Sweet Potato Pound Cake
1/4 tsp salt
1 cup butter
2 cups sugar
2-1/2 cups mashed sweet potatoes
2 tsp baking powder
1 tsp. baking soda
4 eggs
3 cups flour
1 tsp cinnamon
1 tsp. Vanilla

Cream butter and sugar, add potatoes and beat until light and fluffy. Add eggs one at a time, beat well after each addition. Combine dry ingredients and add to creamy mixture slowly. Add vanilla and beat well.

Pour into greased and floured pan. Bake @325 for 1 hour 15min. Glaze with 1 cup confectioners sugar and 3 tbs orange juice

Just remember seeing a recipe for putting chicken legs(skinned) in a crockpot and adding ingredients like maybe BBQ sauce or some sauce.. . I always read your material and thought maybe it was in that Carolyn

It is in the archives on Alicia's Kitchen online.  Please just check the archives. I have over 50 requests a day that want me to search through the archives for a recipe.  I just don't have the time to do it at this time.  Several of my host where my sites are hosted did an update to protect against viruses and trashed over 12000 of my pages.  I spending about 12-15 hours a day getting those pages straightened out.  I still have over 5000 pages  have no formatting and all links on the site no longer work. Currently several sites are down until I can correct pages. If you notice I have almost repaired all of Nancy's Kitchen.  The links are temporarily at the top rather than at the side because I didn't have time to go in and correct the links and formatting on all 7000 pages on that site.  I put them all on one shared page and can change the links from one page rather than 7000 pages.


RE: Sept 10 newsletter, in which Carin in hurricane ravaged FL asked for a Lemon Apricot Cake. Carin, you are in our prayers. We lived in Florida for 3 1/2 years then came back to Texas. I also lived on the island of Okinawa back in the 1960's and we weathered many typhoons while there. My motto became: "This too shall pass." Now on to the CAKE!

My mother gave me this recipe shortly after I married 50 years ago. This happens to be my daughter's lifetime favorite cake and a must for her birthdays.

LEMON APRICOT CAKE
1 package White Cake Mix (OK to use yellow)
1 3 oz package lemon flavor Jello
4 large eggs
3/4 cup apricot nectar
3/4 cup Crisco oil (I use canola)
1 teaspoon lemon extract

Grease & flour a tube pan, preheat oven to 350 F.
Put all ingredients in mixer bowl in order listed; mix at medium speed 4 minutes.
Bake at 350 for 50-55 minutes. Cool in pan no more than 10 minutes; remove to rack to cool. Carefully poke holes in top of cake, and while barely warm, spoon 1/2 of the glaze over it. When completely cool, drizzle with remaining glaze in decorative pattern.

GLAZE
1 cup powdered sugar
1/4 cup lemon juice (I use bottled if I don't have fresh lemons)

Add half of lemon juice to powdered sugar stirring to mix well; add remaining lemon juice a teaspoon at a time until you get the consistency you wish.

Home Made French Dressing
1 Cup nonfat yogurt
1 Cup ketchup
1/2 Cup vinegar
2 Tablespoons sugar
1/2 Teaspoon prepared mustard

Blend ingredients together. May also add pepper, garlic powder,
chopped onion or chopped parsley for a different taste without
changing caloric value. This recipe yields 2 1/2 cups (twenty 2-
tablespoon servings).

Double Chocolate Banana Bread
1-1/4 cups flour
1/4 cup cocoa powder (preferably Dutch processed)
1-1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chocolate chips
1 cup bananas -- mashed
3/4 cup sugar
1 large egg
1/4 cup water
1/4 cup cooking oil

*Preheat oven to 350F.
Grease and flour an 8 x 4-inch loaf pan; set aside. In a medium mixing bowl combine the flour, cocoa, baking powder, baking soda and salt. Stir in chocolate chips. Make a well in the center of dry mixture; set aside.

In another bowl combine the bananas, sugar, egg, water, and cooking oil. Add banana mixture all at once to dry mixture. Stir until moistened. Do not over mix.

Spoon batter into the prepared pan. Bake for 50 to 55 minutes or till a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove loaf from pan; cool to lukewarm on rack. Wrap and store overnight before slicing.

Someone asked for Jar Mix Recipes here is one that was in a previous newsletter several years ago.

POTATO SOUP IN A JAR
1 3/4 C. instant mashed potatoes
1 1/2 C. dried milk
2 T. instant chicken bouillon
2 tsp. dried minced onion
1 tsp. dried parsley
1/4 tsp. ground white pepper
1/4 tsp. dried thyme
1/8 tsp. turmeric
1-1/2 tsp. seasoning salt
Combine all ingredients in a bowl; mix well. Put ingredients in a 1
quart jar.

On gift tag write: Place 1/2 cup mix in soup bowl; add 1 cup of boiling water; stir
until smooth.

DOUBLE FUDGE BROWNIE MIX
Dense and fudgy, these are the best brownies in the world.
2 C. sugar
1 C. cocoa (not Dutch process)
1 C. all purpose flour
1 C. chopped pecans
1 C. chocolate chips
Mix all the ingredients together and store in an airtight container.

Attach this to the jar:
Double Fudge Brownies
Makes 24
1 C. butter or margarine, softened
4 eggs
1 pkg. Double Fudge Brownie Mix
Preheat the oven to 325 degrees F. Grease a 12 x 9 inch pan.
In the large bowl of an electric mixer, cream the butter. Add the
eggs, one at a time, beating well after each addition. Add the Double Fudge Brownie Mix and continue to beat the mixture until it is smooth. Spread the mixture into the greased pan, and bake for 40 to 50 minutes.
