Freezer Pickles
4 pounds pickling cucumbers, thinly sliced
2 large onions, thinly sliced
1/4 cup salt
3/4 cup water
4 cups sugar
2 cups cider vinegar
Combine cucumbers, onions, salt and water in one very large bowl. Let stand at
room temperature for 2 hours. Mix sugar and vinegar and stir until sugar
dissolves. Pour onto cucumber mixture. Pack into freezer containers, leaving
room for expansion. Cover and freeze. Thaw at room temp for 4 hours before
serving, or in refrigerator. These are ready to eat the following day. This
makes 8 to 10 pints.
These are the most incredible sweet pickles and great to put on burgers or
sandwiches.
