This is a most unusual recipe but I thought interesting enough to try. Great way to use left-over mashed potatoes, too.

Mashed Potato Salad
1 1-2 pounds potatoes, cooked and mashed
1/2 c. sweet onions, minced
1/2 c. sweet pickle relish
2 boiled eggs, chopped
1 c. sharp cheddar cheese, grated
salt and pepper
Mix and add:
3/4 c. sour cream
1/2 c. mayonnaise
Refrigerate several hours or overnight.
Top with additional grated cheese for color.

My husband's comment, "Very good but I have to get my mind set away from thinking of mashed potatoes being served cold."
