Summer Salsa
2 lbs. cherry/grape tomatoes
1 cup chopped onion
1 red pepper, chopped
1 yellow pepper, chopped
2 green peppers, chopped
2 tsp. chopped garlic
Dried parsley to taste (or use fresh, finely chopped)
2 tsp. black pepper
Juice of two limes
1 can Rotel tomatoes w/green chilies
Chop onions and peppers to a fine dice. (Use a food processor if you have one.)
Drain juice. Chop tomatoes, but don?t drain. Mix all ingredients. Let sit
overnight to develop flavor. Serve with chips for dipping. Makes a large batch.
