Hi Everybody!
Well Sandee in W. Tn. requested in the Aug. 13th newsletter a recipe for
"Earthquake Cake".
Im sending in my mom's recipe.
Suzie's Earthquake Cake
Spray a 9x13 pan.
Mix small can coconut and 1 1/2 C. chopped pecans.
(I think a small can of coconut = 1 cup coconut)
Spread in bottom of pan.
Mix German chocolate cake mix as directed on box and spread over nuts and
coconut.
Mix 8 oz. cream cheese (softened) with 1 stick margarine, (softened) (1 stick =
1/4 cup) and 1 lb. powdered sugar and drop by spoonfuls over cake mixture.
Bake at 350 for 45 minutes.
This is so easy and soooo delicious!!!!
My mom was a wonderful cook & baker, I miss her and her cooking/baking very
much. She passed away 10/07/04.
