Carolina Barbecued Pork
This a recipe for pork in a crockpot for Wendy in MD
from Mary Jo in Md. This recipe is in the booklet that
came with my old Rival crockpot. Don't let the long list
of ingredients scare you off. This is really good. My
granddaughter doubles the sauce because they like
lots of sauce. Plus we put all of the sauce in the
crockpot at the beginning.

Carolina Barbecued Pork

2 onion, quartered
2 tbsps. brown sugar
1 tbsp. paprika
2 tsps. salt
1/2 tsp. pepper
1 (4 to 6 lb.) bonelest port butt or shoulder roast ( I have used bone in)
3/4 cup cider vinegar
4 tsps. Worcestershire sauce
1 1/2 tsps. crushed red pepper flakes
1 1/2 tsps. sugar
1/2 tsp dry mustard
1/2 tsp. garlic salt
1/4 tsp. cayenne pepper
hamburger buns
Cole slaw, optional

Place onion in crockpot. Combine brown sugar paprika, salt and pepper; rub over roast. Place roast over onions.

Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, mustard, garlic salt and cayenne pepper. Drizzle about 1/3 of vinegar mixture over roast; cover and refrigerate remaining vinegar mixture.

Cover; cook on low 8 - 10 hours. Drizzle about 1/3 of reserved vinegar mixture over roast during last 1/2 hour of cooking.

Remove meat and onions and drain. Chop or shred meat and chop onions. Serve meat and onions on buns. If desired top sandwiches with coleslaw. Pass remaining vinegar mixture to drizzle over sandwiches.
Makes 10 - 12 servings.
