Zucchini Cake
3 eggs
1 c. oil
3 c. plain flour
2 c. sugar
3 tbsp. cinnamon
1 tsp. soda
2 c. peeled, grated zucchini squash
1/4 tsp. baking powder
1 tsp. salt
3 tsp. vanilla
Add eggs, oil, sugar, vanilla and zucchini.
Add other ingredients. Beat well and pour into
2 round pans. Bake at 350 degrees for 45
minutes to 1 hour.
